On the palate, this EVOO is once again very green, maintaining its characteristic nuances that remind of olive leaf, fig leaf or green almond. Both the bitterness and the spiciness are medium-high in intensity and are robust and persistent from the moment they enter the mouth. They maintain the balance, though.
