On the palate, it has a sweet entry which then becomes astringent but pleasantly reminiscent of artichoke. Green nuances of banana peel, green almond or green wheat also appear. It has a balanced bitterness and spiciness which, together with the complexity of the descriptor nuances, make it an oil with a robust and persistent fruitiness.
